I often missed out on the joy of baking due to the sugar, gluten, and butter that’s constantly being used in so many delicious recipes. Those same ingredients can trigger acne flare ups so I kept cautious and stayed away. Recently, with some experimentation, I’ve learned how substitute ingredients without sacrificing taste.
This coconut custard pie was an absolute hit! I’ll admit it’s even healthy-ish. This pie is definitely skin-friendly because I’ve carefully picked up ingredients that are safe for acne-prone skin. Here are the star ingredients:
Unsweetened coconut flakes – are rich in fiber and MCTs, high in manganese, copper and iron, as well as selenium, an important antioxidant that protects your cells.
Ghee – replaces regular butter and serves as a rich source of vitamins, antioxidants, and healthy fats. Fatty foods like ghee can also help the body absorb other nutrients. You can read why ghee is safe for acne-prone skin in this article.
Einkorn flour – is an ancient species of wheat that is naturally lower in gluten than what you have in modernized wheat. Lower levels of gluten can minimize inflammatory reactions in the skin. It has protein, iron, a number of B Vitamins, and a significant amount of the powerful antioxidant Lutein.

INGREDIENTS
2 cups of unsweetened, vanilla oat milk
1/3 cup melted ghee
3/4 cups brown sugar or dark brown sugar (has a stronger molasses taste)
1 cup unsweetened shredded coconut flakes
3 cage-free eggs
1/2 cup Einkorn flour
1 dash salt
2 teaspoons vanilla extract
1/2 teaspoon almond extract (optional)
2 tablespoons of raw honey (optional)
DIRECTIONS
Melt the ghee and then add all the ingredients together into a bowl and mix well.
Pour into greased 10″ pie plate. Bake at 40 minutes at 350F degrees. Then let it cool for 10-15 minutes at room temperature. For best results, refrigerate the pie for 3-4 hours before serving.
Coconut flakes will float to the top and come to crisp, while the pie makes its own crust! This is about 10 servings. Enjoy and happy baking!
